The techniques shown to our class by Chef Carlos cannot be fully communicated in a recipe-you have to see how they are done and why. Learning about using parchment paper was the biggest revelation since I am a baker. I use parchment paper frequently. Valencian paella is such an interesting and delicious version of paella with subtle flavour. The method is simple yet has its complexity in rice to liquid ratio, the caramelized chicken fat as part of the broth. The stirring method to make a tortilla is fascinating.
